8 ounces elbow pasta
4 tablespoons butter
4 tablespoons flour
2 cups milk
1 teaspoon salt
½ teaspoon pepper
2 cups sharp cheddar cheese, shredded
2 cups flour
2 cups bread crumbs
- Cook elbow pasta in boiling water for 7 minutes. Drain.
- Make the sauce: Create a roux by whisking flour into butter, which has melted over medium-low heat. After 2 minutes, pour 2 cups of milk into the mixture and stir thoroughly. Season with salt and pepper. When the sauce begins to bubble and thicken, add cheese and stir until the entire mixture is completely blended.
- Add the cooked pasta to the cheese sauce, and stir until the mixture is a uniform consistency. Spread the mac and cheese into a parchment-lined baking dish, and freeze for 2 hours to help the mixture become firm enough to work with in the next steps. When the pasta is cool and firm, turn it out onto a chopping board. Slice it into sticks.
- Prepare the sticks for frying by dredge each piece in flour, beaten egg, and breadcrumbs. Fry the macaroni sticks in oil for 2 to 3 minutes. Drain them on a paper towel, and serve with the condiments of your choice.
